What "sugarcane process" actually means

Most decaf tastes flat because the process that strips out the caffeine strips out flavor along with it. The sugarcane method uses ethyl acetate derived from fermented sugarcane — a naturally occurring compound rather than a synthetic solvent — to bond with and remove caffeine from green coffee. It's gentler on the bean's sugars and aromatics, which is why this cup still tastes like coffee from somewhere rather than like generic brown liquid.

How to brew it

Start at 1 gram of coffee to 16 grams of water, then adjust to taste. Decaf beans are slightly more brittle than caffeinated ones and tend to grind a touch finer at the same setting — if your cup tastes harsh, go one step coarser before changing anything else.

• Drip — 60 g per litre.
• French press — coarse grind, four minutes, then plunge and pour out immediately.
• Espresso — 18 g in, 36 g out, 25–30 seconds. Expect a slightly faster shot than you'd get from the same dose of caffeinated coffee.

Choosing your roast

Medium keeps the strawberry and citrus notes in play. Dark pushes toward chocolate and almond and makes a fuller after-dinner cup.
